On Tuesday 28th July, the Malta Business Bureau (MBB) and Institute of Tourism Studies (ITS) are hosting a 1-hour webinar targeting professional chefs and restaurant managers. During this webinar, participants will be introduced to the LIFE FOSTER training model which was developed by the University of Gastronomic Sciences of Pollenzo (UNISG), the project’s scientific partner.
Professor Nadia Tecco from UNISG will be explaining the design and principles that went into the training model. ITS Lecturers Ronald Briffa and David Pace, both of whom participated in last year’s train-the-trainer in Conegliano, will then discuss how this model can be applied in practice in restaurant kitchens and the benefits it can bring.
A number of chefs and restaurant managers have been invited to participate in a panel discussion during the webinar, to provide reactions to the FOSTER model and the industry’s perspective on food waste. The discussion will be chaired by the MBB and will centre around the importance they place on waste in their own kitchens and methods they have already implemented to reduce it.
This webinar comes in the context of a series of practical training workshops for chefs and kitchen staff which will be offered over 2020 and 2021 in Malta.
